Quick and Easy Vegan Pasta and Meatballs

A quick and easy, budget-friendly meal to serve after a long day at work, or when you just need to feed the family fast.

(2-4 servings)

Ingredients:

1 pkg. Farfalle (Bow tie pasta), or pasta of choice
1 jar Chunky Garden Style spaghetti sauce
1 pkg. Gardein Meatballs (in the frozen section)
1-2 T. Italian seasoning
1/2 T. dried basil
1/2 T. garlic powder
1/2 T. onion powder
1/2 c. frozen chopped onions
1/2 c. frozen chopped green peppers
1 4-oz. can sliced mushrooms
Red pepper flakes to taste (optional)

Directions:

Prepare pasta according to package directions. While pasta is cooking, empty sauce into saucepan on medium heat. Add onions, peppers, mushrooms, and seasonings. Heat through and adjust seasonings to taste. While pasta and sauce are being prepared, heat Gardein Meatballs according to package directions.
Once pasta has cooked, drain and set aside. After meatballs are ready, they can be placed in the sauce pot or served on top of pasta and sauce. A simple side salad can also be served to round out the meal.

Variations:

Veggie burger crumbles can also be used in place of meatballs. Add to the pot at the same time as the vegetables for a richer, thicker sauce. Fresh instead of frozen veggies can also be used, but it will lengthen the preparation and cooking time. Vegan Parmesan cheese can be sprinkled on top of the dish when served, or a few tablespoons can be added to the sauce while cooking for a cheesy taste.
